Dilly Beans & Pickled Okra (Crunch-Focused Lacto)
Snappy spears of green bean or okra, soured in a garlicky-dill 4% equilibrium brine. This recipe is built around one goal — crunch — so it leans on a firm 4% brine, a tannin source, and a cool ferment to hold the pectin together.
Ingredients
Section titled “Ingredients”Beans and okra are firmer than cucumbers, but okra in particular can go slimy, so we run a solid 4% equilibrium (in the 3–5% crunch band) plus a tannin leaf. Weigh your real pack and size salt against the vegetable + water total.
| Ingredient | 1 Jar (~1 L) | 1 Crock (~2 L) |
|---|---|---|
| Green beans, trimmed (or whole small okra) | 400 g | 800 g |
| Filtered water | 600 g | 1,200 g |
| Non-iodized salt (4.0% of veg + water) | 40 g | 80 g |
| Garlic, smashed | 3 cloves | 6 cloves |
| Fresh dill (heads + fronds) | 1 large head | 2 large heads |
| Tannin leaf (oak, grape, horseradish, or 1 black-tea bag) | 1 leaf | 2 leaves |
| Black peppercorns | 1 tsp | 2 tsp |
| Mustard seed | 1 tsp | 2 tsp |
| Dried chile or red-pepper flakes (optional) | 1 small | 2 small |
One quart jar: about 400 g of crunchy spears plus brine. The crock doubles it.
Calculated values
Section titled “Calculated values”| Value | Target |
|---|---|
| EQ salt % (of veg + water) | 4.0% (band 3–5% for crunch) |
| Target finished pH | 3.4–4.0 |
| Ferment temp | 18–22 °C / 64–72 °F (run the cool end for crunch) |
| Day range | 5–14 days |
Salt is (veg_g + water_g) × 4.0 / 100. For the jar: (400 + 600) × 0.04 = 40 g. Confirm with the
brine salinity calculator.
Readiness window
Section titled “Readiness window”Bubbling builds over days 2–6 and slows as the brine sours. Begin tasting at day 4. Finished beans and okra are tangy and garlicky but should still snap — if they bend without breaking, they were too warm, too long, or short on tannin.
Done when: a calibrated meter reads pH 3.4–4.0 and the spears taste sour and still snap — usually 5–14 days. Arrest by refrigerating at 2–4 °C, which locks in crunch.
Method
Section titled “Method”Pick firm, fresh produce
Use very fresh, slender green beans or small tender okra — older, woody pods never get crunchy. Trim the bean ends; leave okra whole with the stem cap intact (cutting okra open releases the slimy mucilage). Rinse well.
Pack tight with a tannin leaf
Lay the tannin leaf, garlic, dill, peppercorns, mustard, and chile at the bottom and stand the spears upright, packed tight so they stay submerged. The tannin is your main crunch insurance — see Spices & Tannins.
Weigh the base and size the salt
Fill with water to ~2 cm headspace, then pour it into a tared bowl to read it. Record veg + water and multiply by 4% — for ~400 g veg + 600 g water that’s 40 g salt. Use the brine salinity calculator and the fermentation predictor.
Make the brine and submerge
Dissolve the salt fully in the measured water and pour it back over the spears until covered. Set a fermentation weight on top so nothing floats above the brine line.
Ferment cool and burp
Cover loosely or fit an airlock, out of direct sun. Run the cool end of 18–22 °C for the best snap, and burp daily if sealed.
Finish by pH, then chill
Start tasting at day 4. When sour and still snapping — usually 5–14 days — confirm pH 3.4–4.0 with a calibrated meter, then refrigerate at 2–4 °C to arrest.
Variations / mix-ins
Section titled “Variations / mix-ins”- Spicy dilly beans: add extra chile and a few coriander seeds.
- Cajun okra: add a pinch of cayenne and a bay leaf.
- Mixed jar: beans and okra ferment well together at the same 4% brine.
