Lacto-Fermented Salsa
A fresh chunky salsa that ferments in its own salted juices for a few days, gaining a clean lactic tang and a faint spritz — brighter and more complex than a raw pico, finished cold with lime and cilantro so the herbs stay fresh.
Ingredients
Section titled “Ingredients”This is a dry-salt ferment: salt is 2.5% of the total chopped-vegetable weight, and the vegetables release their own brine. Cilantro and lime go in after fermenting so they don’t turn dull.
| Ingredient | 1 Jar (~1 qt / 1 L) | 1 Crock (~2 L) |
|---|---|---|
| Ripe tomatoes, cored and chopped | 500 g | 1000 g |
| White or red onion, diced | 120 g | 240 g |
| Jalapeño / serrano, deseeded and minced | 40 g | 80 g |
| Garlic cloves, minced | 15 g | 30 g |
| Vegetable weight | 675 g | 1350 g |
| Salt at 2.5% of vegetable weight | 17 g | 34 g |
| Lime juice, added after ferment | 20-30 g | 40-60 g |
| Fresh cilantro, chopped, added after ferment | 15 g | 30 g |
| Ground cumin (optional), tsp | 1/2 tsp | 1 tsp |
Yield: about 650-700 mL salsa per Jar; 1.3-1.4 L per Crock.
Calculated values
Section titled “Calculated values”- Dry-salt: 2.5% of the chopped-vegetable weight (range 2-2.5%). Use calc-dry-salt for grams.
- Target finished-ferment pH: 3.4-4.0 (meter-verified). Tomatoes start fairly acidic, so this ferment crosses the safe line quickly — but onion and garlic are low-acid, so still verify.
- Ferment temperature & time: 18-22 °C / 64-72 °F for 2-5 days (chopped ferments move fast).
Readiness window
Section titled “Readiness window”- Days: 2-5 days at 18-22 °C. The mix releases liquid within hours and starts bubbling by day 1-2.
- Done-when: pleasantly sour with a faint fizz, the raw onion bite softened, and a meter reads pH 3.4-4.0. Pull it before it gets mushy or overly sour.
- Arrest: stir in lime and cilantro, then refrigerate at 2-4 °C. Best within 1-2 weeks while the texture holds.
Method
Section titled “Method”Chop and salt
Weigh all the chopped vegetables together for the vegetable weight, then add 2.5% salt. Toss thoroughly so the salt is even — it pulls juice out to form the brine.
Pack and submerge
Pack into the vessel, pressing firmly so the released juice rises to cover the solids. Weight it down; floating tomato skin and onion will mold. Leave 2-3 cm headspace.
Ferment 2-5 days
Hold at 18-22 °C / 64-72 °F out of the sun. Burp daily if sealed. Taste from day 2 — it moves fast.
Confirm the ferment
When it tastes brightly sour and lightly fizzy, confirm pH 3.4-4.0 on a calibrated meter.
Finish cold
Drain off excess brine if you want a thicker salsa. Stir in lime juice, fresh cilantro, and cumin. Adding lime only lowers the pH, which is safe.
Refrigerate
Move to 2-4 °C. The cold halts the ferment and keeps the chop crisp.
Variations / mix-ins
Section titled “Variations / mix-ins”- Salsa verde: swap tomatoes for husked, chopped tomatillos at the same 2.5% dry-salt; expect a faster, tangier ferment.
- Roasted-then-fermented: char the chilies first, cool fully, then ferment — adds smoke without cooking out the ferment.
- Mango or pineapple: replace 100 g of tomato with diced fruit for a sweet-hot fruit salsa (re-check pH; fruit is low-acid).
- Mild: deseed and halve the chili; the 2.5% salt is unchanged.
