Base Brine — Bread-and-Butter
Bread-and-butter is the sweet-tart pickle: a sugar-forward vinegar brine perfumed with turmeric, mustard, and celery seed, classically over cucumber and onion. It is the quick-pickle brine with the sugar dial turned way up.
Characteristics
Section titled “Characteristics”| What it is | Sweet, spiced vinegar brine (cucumber + onion classic) |
| Acid | 5% vinegar (white or cider) |
| Sugar | High — roughly equal in volume to the vinegar |
| Salt | ~1.5% of brine weight |
| Signature spice | Turmeric, yellow mustard seed, celery seed |
| Best for | Sliced cucumber and onion; also zucchini |
| Storage | Refrigerated 2–4°C / 36–40°F |
| Shelf life | 2–4 weeks (refrigerated) |
The formula (ratios)
Section titled “The formula (ratios)”- 2 parts 5% vinegar
- 2 parts sugar (by volume — sweetness is the defining trait)
- 1 part water
- +1.5% salt (by total brine weight)
- Per liter of brine: ~1 tsp turmeric, ~1 Tbsp yellow mustard seed, ~1 tsp celery seed
The high sugar is what separates this from a savory dill brine; the turmeric gives the signature gold color, mustard and celery seed the savory back-note. This mirrors the proportions used in tested bread-and-butter recipes (vinegar, sugar, turmeric, mustard).
Scaling table
Section titled “Scaling table”One jar ≈ 500 mL finished brine over a packed pint of sliced cucumber and onion.
| Component | 1 Jar | 2 Jars | 1 Crock | 6 Crock |
|---|---|---|---|---|
| 5% vinegar | 200 mL | 400 mL | 800 mL | 4800 mL |
| Sugar | 200 g | 400 g | 800 g | 4800 g |
| Water | 100 mL | 200 mL | 400 mL | 2400 mL |
| Salt | 8 g | 15 g | 30 g | 180 g |
| Turmeric | 1 tsp | 2 tsp | 4 tsp | 8 Tbsp |
| Yellow mustard seed | 1 Tbsp | 2 Tbsp | 4 Tbsp | 1.5 cup |
| Celery seed | 1 tsp | 2 tsp | 4 tsp | 8 Tbsp |
| Brine yield | ~500 mL | ~1 L | ~2 L | ~12 L |
Calculated values
Section titled “Calculated values”- Brine acidity: ~2% acetic (5% vinegar at 2:1 against water), rounded by heavy sugar.
- Sugar: high — the defining sensory trait; it does not change the safety math.
- Finished pH: the brine is acidic, but the cucumber and onion buffer the finished jar upward. Measure before assuming anything is below 4.6.
Variations
Section titled “Variations”- Less sweet: halve the sugar toward the base quick-pickle brine.
- Spicier: add red-pepper flakes or sliced chile.
- Zucchini: swap zucchini for cucumber — a classic bread-and-butter variant.
