Fermented Chili Pastes
Why this method
Section titled “Why this method”Fermented chili pastes are the dense, savory cousins of hot sauce — doubanjiang (Sichuan broad-bean and chili), sambal (Indonesian chili paste, often fermented), and harissa (North African chili paste). Where a hot sauce ferments wet and thin, a paste ferments thick and salty, often aged for months so that proteins and chilies break down into deep umami. Higher salt — frequently 3-6% by weight, and much higher in long-aged styles — slows the ferment, protects the paste over a long age, and shifts the microbial succession toward the slow, flavor-building organisms. Many traditional pastes also recruit koji (Aspergillus oryzae) for enzymatic depth.

| Active ferment | 1-4 weeks |
| Aging | weeks to many months |
| Finished paste pH | 3.4-4.2 (meter-verified) |
| Storage | refrigerate, or shelf-stable only with verified pH at or below 4.6 |
Equipment
Section titled “Equipment”- Digital scale (1 g resolution)
- Mortar, food processor, or grinder for the paste
- Fermentation crock or jar; for sun-aged doubanjiang, a breathable cloth-covered vessel
- Gloves and eye protection (capsaicin)
- Calibrated pH meter
Workflow
Section titled “Workflow”Build the base
Grind chilies with the style’s aromatics — garlic, ginger, and sometimes spices for harissa; chili and salt for sambal. For doubanjiang, you ferment broad (fava) beans with koji first, then combine with salted fermented chilies. Koji bean ferments incubate at 28-32 °C before salting.
Salt to the style
Weigh the paste and add 3-6% salt by weight — toward the high end for long aging. The dry-salt calculator gives grams for any batch. Salt is your main hurdle across a months-long age, so do not cut it.
Ferment, then age
Pack the paste into the vessel, pressing out air pockets. Lacto styles ferment anaerobic at 18-22 °C for 1-4 weeks, then age. Traditional doubanjiang ages uncovered in the sun, stirred daily — an aerobic, koji-driven path distinct from the anaerobic submerged route. Choose one route and follow it; don’t improvise between them.
Test and store
Confirm pH 3.4-4.2 with a calibrated meter. High-salt pastes keep well refrigerated; a thin oil cap on the surface excludes air during storage.
