pH & Acidity Safety
This is the safety-critical calculator. The Safety check tab gates a measured finished pH against the 4.6 botulism line (with a 4.2 canning target). The Acid dilution tab helps you build a vinegar brine at a target acidity.
Estimated pH is not a measurement. It assumes a uniform, fully-equilibrated solution and ignores the buffering of solid food. For anything shelf-stable, confirm the finished equilibrium pH with a calibrated pH meter (FDA: a finished pH above 4.0 must be read with a meter, not strips). See Safety First.
The 4.6 line
Section titled “The 4.6 line”A finished equilibrium pH ≤ 4.6 prevents Clostridium botulinum from producing toxin — this is the single fact that decides whether a high-acid food can be safely water-bath canned. We target ≤ 4.2 to leave a margin for home-measurement error. Foods above 4.6 are low-acid and require pressure canning, which we refer out.
