Calculators & Tools
Every calculator here is an interactive React island backed by a single shared data module
(src/components/calc-data.jsx), so the numbers can never drift between a calculator, a table,
and a recipe.
Three tools: equilibrium brine, dry-salt, and a salt converter. Salt by weight, corrected for purity. Available now.
Estimate days-to-ready from temperature, salt %, and time. Available now.
Gate a measured pH against the 4.6 line and dilute vinegar to a target acidity. Available now.
The flagship: design a ferment and pull live flavor pairings + predicted faults from the pairing engine. Available now.
How the numbers stay honest
Section titled “How the numbers stay honest”- Salt % is by weight. The brine calculator computes salt against the combined vegetable + water weight (the equilibrium method), so the whole jar reaches the target.
- pH 4.6 and the 2 % salt floor are named constants in the data module — referenced by prose, tables, and code alike.
- Estimates are labeled as estimates. Predicted pH and fermentation timing are guides; shelf-stable safety always requires a calibrated pH meter on the finished product. See Safety First.
