Pickle & Ferment Designer
The flagship tool. Choose a vegetable and how you’ll transform it, and the Designer shows what the process does to its taste (SAFH), which characters develop or fade, the predicted fault shifts, and — live from pair.modernist.food — what the fermented result pairs with.

What you’re looking at
Section titled “What you’re looking at”- Taste shift (SAFH): how the process moves Salt, Acid, Fat, and Heat on a 0–10 scale — e.g. pickling a cucumber adds acid and salt; lacto-fermenting cabbage adds acid.
- Character & faults: the aroma compounds the process develops and fades, plus predicted fault shifts (orange ↑ increases, green ↓ reduces). Pickling fades fresh green aldehydes and lifts ferment/pungent character; lacto-fermentation reduces bitterness and astringency.
- Pairs well with: live pairings drawn from shared aroma compounds, computed for the fermented counterpart (cabbage → kimchi, garlic → black garlic) where one exists in the flavor graph.
